Berries & Butter

It seems silly to post a recipe that involves nothing but layering a few of your favorite fruits, nuts, nut butters, and vegan sugar free chocolate. But that’s the beauty of this, right?! It’s so simple and so sweet, and it kicks that dessert craving right out the door, with healthy and whole ingredients.

When people think about dessert, they usually imagine a complicated, time consuming process of measuring flours and butters, clunky cake mixers, dirty baking pans, and a tiny bit of impatience. Don’t get me wrong, I love a good slice of gluten free chocolate cake, but when I’m craving that mid-week, after dinner sweet snack, I’m probably not going to embark on a baking quest. There’s a time and place for that, and it simply isn’t every night, during a busy week.

So instead, I like to put together a super simple and easy Berries & Butter bowl.

This bowl takes me about 5 minutes to put together, and always hits the spot.

Slice a few organic strawberries (farmer’s market produce preferred - it just tastes so much better!) and throw them in a bowl with organic blackberries, blueberries, and pecans. Top it off with a few chunks of Lily’s stevia sweetened vegan dark chocolate, raw coconut chips, and a drizzle of roasted almond butter. Enjoy while wrapped in a fluffy blanket, in front of your favorite Wednesday night episode, current Netflix obsession, or mayyyybe a good book. Pure soul food, people.
