Spring Citrus

One thing we all love about the springtime, is the fresh citrus. Citrus is such a wonderful ingredient with powerful health benefits, as well. Citrus is known for its high Vitamin C contents, an antioxidant that protects the body from damaging free radicals. While citrus is high in Vitamin C, it also contains folate and thiamin, while taking part in the synthesis of collagen, which is why it's in a lot of the clean skincare you see today. Collagen is what helps wounds heal, giving blood vessels, tendons, ligaments, and bones the power to hold themselves together.

More specifically, oranges help inhibit colorectal cancer cells form, so it's important for someone with gut health issues to get some form of this fruit into their diets, even if it's in moderation.

Grapefruits on the other hand have a wonderful source of calcium, assuring that those of us who are eating a plant based diet are getting enough of what we need to keep our bones and teeth as healthy as possible. But do be cautious with grapefruits, and check in with your doctor on whether or not it's a good idea to implement them into your diet. Grapefruits can interfere with the breakdown and absorption of certain pharmaceutical drugs, so if you're on any medication, give this dietary addition some extra thought.

What You’ll Need

Serves: Three-Four

Prep & Cook Time: 15-20 minutes

1 sliced Orange

1 sliced Grapefruit

3-4 sliced Radish

1 sliced Avocado

a handful Sprouts & Microgreens

a few sprigs/a handful chopped Fresh Basil

a few sprigs/a handful chopped Fresh Mint

to taste/a few pinches Pink Himalayan Salt

a few cracks Freshly Cracked Pepper

to taste Dried Thyme

to taste Dried Rosemary

to taste Citrus Dressing

Optional Toppings

Tajin or Dried Chile

Recipe

Slice the citrus, radish, and avocado, layering them as you go. I like to start with the heaviest produce, using the grapefruit and orange as the base, then layering the avocado on top, then the thinly sliced radishes.

Once the produce is layered, sprinkle slices of fresh basil and mint on top, along with your favorite sprouts.

For the citrus dressing, squeeze one orange, one lemon, and mix it in a small bowl with a drizzle of avocado oil, adding salt, pepper, thyme, and rosemary, to taste.

Drizzle the citrus dressing on top, along with a few cracks of salt and pepper, and enjoy!

For additional tang and spice, if it doesn't upset your stomach of course, add some tajin or dried chile powder! The spice really brings it all together, completing this dish in a beautiful and flavorful way.
